Surprise Muffins
Ingredients:
1 1/2 cups all-purpose flour
1/2 cup Splenda
1 cup frozen or fresh blueberries
2 1/2 tsp. ground cinnamon
1/4 tsp. salt
1 egg beaten
2/3 cup milk
Directions
1. Preheat oven to 400 degrees.
2. Grease muffin tins and set aside.
3. Combine flour, Splenda, blueberries, baking powder, cinnamon, and salt.
4. Then add egg, milk, and butter.
5. Pour half of the muffin batter evenly in greased muffin tins.
6. Then put jelly on each half and pour the rest of the batter over that.
7. In small bowl mix together Splenda and cinnamon.
8. Sprinkle over batter.
9. Bake 18-20 mins. or until toothpick comes out clean.
1/4 cup (1/2 stick) butter
3 Tbs. sugar free peach jelly or whatever is in the fridge
Topping
1 Tbs. Splenda
1/4 tsp. ground cinnamon
