Sugar Free Vanilla Pudding
Ingredients:
2 tablespoons Splenda
1 tablespoon cornstarch
1/8 teaspoon salt
1 cup 2% milk
1 egg yolk, lightly beaten
1 1/2 teaspoons unsalted butter
1/2 teaspoon vanilla extract
Directions
1. In a small saucepan, combine the Splenda, cornstarch and salt.
2. Gradually stir in the milk, stirring continuously.
3. Cook and stir over medium heat until thickened and bubbly then reduce heat and cook and stir for 2 more minutes.
4. Remove from the heat and stir a small amount of hot pudding filling into the egg yolk.
5. Return all ingredients to the pan, stirring constantly.
6. Bring to a gentle boil then cook and stir for 1 minute longer.
7. Remove from the heat and gently stir in butter and vanilla.
8. Cool for 15 minutes, stirring occasionally transfer to dessert dishes.
9. Cover and refrigerate for 1 hour before serving
