Sugar Free Strawberry Muffins

Ingredients:

1-3/4 c. all-purpose flour
3/4 c. agave nectar
1 tsp. baking soda
1/4 tsp. ground nutmeg
2 eggs, lightly beaten
1/2 cup plain yogurt without added sugar

Directions

1.  In a medium bowl combine the flour, agave nectar, baking soda, and nutmeg.

2.  In another bowl whisk the eggs, vanilla, butter, and yogurt.

3.  Mix into the dry ingredients until just moistened.

4.  Fold in the strawberries.

5.  Fill muffin tins with paper liners and pour strawberry muffin mixture in about 2/3 full.

6.  Bake at 375° for about 15-18 minutes or until a toothpick inserted comes out clean.

7.  Cool for aboutu 5 minutes and then remove from pan and place on a wire rack.

8.  These are delicious when served warm.
