Sugar Free Cherry Pie
Ingredients:
dough for 2-crust pie
1 egg
Water
4 cups fresh pitted sour cherries
1 and 1/2 tablespoons of all-purpose flour
1/4 teaspoon of salt
2 tsp lemon juice
1/4 teaspoon of almond extract
2 tablespoons butter, cubed
1 cup of Agave Nectar or equivalent sweetener of your choice
Directions
1. Preheat Oven to 425 degrees.
2. Mix 1 egg and 1 tbs of water to make an egg glaze.
3. In a 9-inch pie pan, place 1 piece of pie dough. Brush the dough with the egg glaze. Keep the pie crust in the refrigerator while you make this filling.
4. In a bowl, combine cherries, flour, salt, agave, and almond extract. Stir and let the cherry pie mixture stand for about 5 minutes.
5. Spoon the cherry pie mixture into the prepared crust and evenly spread out the butter cubes on top. Moisten the edge of the crust with the egg glaze.
6. Roll out the second half of dough on a flat surface until it is about 1/8" thick. Cut dough into 1/2 inch strips and lay the strips across the top and make sure that the strips are pinched together at the edges. Once the top of crust is covered, brush with the egg glaze.
7. Let cool and serve.
