Sugar Free Apple Turnover
Ingredients:
Crust:
1 cup all-purpose flour
1/2 tsp. salt
1/2 cup unsalted cold butter, divided
1/4 cup ice water

Directions
In a small bowl, mix the flour and salt. Cut in 1/4 cup of the unsalted butter until crumbly. Gradually add the ice water and toss with a fork until a ball forms. On a lightly floured worksurface, roll the dough into a 12-in. x 6-in. rectangle.
Cut the remaining butter into thin slices. Starting at a short side of the turnover dough, arrange half of the butter pieces over two-thirds of the rectangle to be within 1/2 in. of the edges. Fold unbuttered third of the turnover dough over the middle third. Fold the remaining third of it over the middle to form a 6-in. x 4-in. rectangle. Roll the dough into a 12-in. x 6-in. rectangle. (You aren't done yet but trust me it's worth it!)
Repeat the above steps of layering the butter pieces and folding the dough to end with a 6-in. x 4-in. rectangle. Wrap the rectangle in plastic wrap and refrigerate for about 15 minutes. Remove dough from the refrigeratore and roll it into a 12-in. x 6-in. rectangle. Fold the dough rectangle in half lengthwise and then fold widthwise. Wrap it in plastic wrap refrigerate for about 1 hour. (This takes patience but it's very tasty!)
In the meantime use a small saucepan and place the Agave Nectar, cornstarch and cinnamon in it. Add the sliced apples and lemon juice, tossing to coat. Bring this apple turnover mixture to a boil over medium heat stirring constantly. Reduce the heat and simmer uncovered for about 5-10 minutes or until apples are nice and tender. Make sure to stir often. Remove pan from the heat.
In a small bowl, mix the egg and water. Remove dough from the refrigerator and roll it into a 12-in. square. Cut this into four squares. Brush with the egg mixture. On top of that Spoon about 1/4 cup of the filling on half of each square. Fold the dough over the apple filling. Press along the edges with a fork to seal. Place on an ungreased cookie sheet and brush with remaining egg mixture. With a sharp knife, cut three small slits on the top of each apple turnover.
Bake these delicious sugar free apple turnovers at 450° for 17-22 minutes or until golden brown. Remove from the oven and place on a wire rack. Drizzle any leftover egg over the turnovers.

1/8 tsp. ground cinnamon
2 medium tart apples, peeled and thinly sliced
1 tsp. lemon juice
1-1/2 tsp. water
1 beaten egg
