Rainbow Cookies
Ingredients:
1 cup unsalted butter
1/2 tsp. salt
1 tsp. vanilla
1 cup Splenda
2 1/2 cups flour
Food coloring, your choice of colors
Directions
Blend together the butter, salt, vanilla, and Splenda. Gradually blend in the flour. Seperate the cookie mixture into four parts. Color three parts of the dough with food coloring, keeping the fourth one uncolored. Mix each section together until they form a smooth dough. Take a little bit from each portion and roll into seperate long strips. Place the four strips side by side on a floured surface. Roll out with a lightly floured rolling pin until cookie dough is 1/8 inch thick. Cut into rectangles and place on a greased baking sheet. Bake rainbow cookies at 350 degrees for 10 mins. Make sure not to brown. Leave cookies in pan to cool and then serve.
