Ingredients:

2 1/2 lbs potatos, peeled and cubed
1 large yellow onion
1 garlic clove, minced
10 slices of bacon, cooked but keep 1/3 cup of the bacon grease
1 cup instant potatos
4 cups chicken stalk
3 cups half and half
1 tsp black pepper
1 tsp salt

Directions

First put the cubed potatos in a large bowl of cold water and let sit.  Peel and quarter the onion.  Chop the garlic clove and put in a food processor with onions.  Pour the chicken broth into a large pot on medium heat.  On another burner on medium heat add the garlic and onion mixture and saute in 1/3 cup of bacon grease for about 4-5 minutes.  Crumble the bacon into the large pot of chicken stock.  Combine the garlic and onion mixture into the pot and simmer for about 15 minutes.  After that, add the cubed potatos, half and half, and salt and pepper.  Reduce the heat and simmer for about 45 minutes or until potatos are tender.  Add the instant pototatos to the soup mixture, stir and serve!
