Orange Muffins
Ingredients:
1 c. agave nectar
1/2 c. 100% orange juice
1/4 c. butter
1 c. Splenda
3/4 c. sour cream
2 tsp. grated orange rind
Directions
1. First mix the Splenda and orange juice and let it set in a small bowl.
2. Cream the butter and agave nectar.
3. Add sour cream, orange rind, flour, baking soda, and baking powder to the butter mix, making sure they are thorougly incorporated.
4. Add muffin paper to muffin tins and fill with batter about 2/3 full.
5. Bake at 375 degrees for about 12 to 15 minutes.
6. While muffins are still warm, dip the tops in orange juice and Splenda mixture and place on a wire rack.
