Banana Bread Bars

Ingredients:

1 C. Agave Nectar
1/2 C. shortening
1 tsp. vanilla
2 eggs
1 tsp. baking soda
2 c. flour
3 ripe bananas, mashed
2 tbs. lukewarm water

Directions

Cream together the Agave Nectar and shortening.  You can also use unsalted butter instead of shortening, whichever is on hand.  Mix in the vanilla and eggs until well combined.  Add the flour, baking soda, and water to the mixture.  Blend until all ingredients are well blended and banana batter is creamy.  Grease an 8x8 baking dish with cooking spray, butter, or shortening.  Pour batter into dish.  Bake at 325 degrees for about one hour.  The sides of the bread should be pulling away from the dish and slightly browned.  Remove from oven and cool slightly.  Cut into squares and serve with butter or your favorite frosting.
