Banana Bars with Cream Cheese Frosting
Ingredients:
1/2 cup unsalted butter, softened
2 cups Agave Nectar
3 eggs
1-1/2 cups mashed ripe bananas (about 3 medium)
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
Dash salt
Directions
In a large bowl, cream butter and Agave Nectar until light and fluffy. It won't be too fluffy because of the Agave Nectar. Beat in the eggs, mashed bananas and vanilla. Mix in the flour, baking soda and salt and stir until blended into a creamy mixture. Transfer the banana bar mixture into a greased 15-in. x 10-in. x 1-in. baking pan and bake at 350° for 20-25 minutes or until a toothpick inserted near the center comes out clean. Cool in the pan on a wire rack.
While the banana bars are cooling, mix the cream cheese frosting. For this, in a small bowl, beat the cream cheese and unsalted butter until fluffy. Add the Agave Nectar, Splenda, and vanilla and beat until smooth. Frost the cooled bars. Please note: you can use 2 cups of Splenda instead of 1 cup of Agave Nectar and 1 cup of Splenda. It's really your preference on what your favorite sweetener is.
