Baked Peach Pudding
Ingredients:
2 cups milk
2 cups breadcrumbs
¼ cup unsalted butter, softened
1 cup Agave Nectar
2 medium eggs, beaten
¼ teaspoon cinnamon
Pinch salt
3 cups thinly sliced fresh peaches
Ice cream, for serving
Directions
Preheat oven to 350°F. Lightly grease a 9x13 casserole dish. Place milk in a large saucepan over medium heat bring to a gentle boil then remove from heat. Place breadcrumbs in a large bowl and then add hot milk to breadcrumbs. Add unsalted butter to the mixture and beat with an electric mixer until well combined. Add Agave nectar, eggs, and cinnamon and beat well. Fold peaches into mixture until just combined.
Transfer peach pudding mixture to prepared casserole dish and bake about 60 minutes. Remove and cool for about 15 minutes and then serve with sugar free vanilla ice cream.
